Manufacturer Statement on Mechanical Ventilation

As the manufacturer of Turbofan Convection Ovens - we are often asked about
mechanical ventilation requirements.
The requirement for mechanical ventilation is determined by requirements of the State,
County or City building code, the Fire Marshall, and the department of health.
Notwithstanding the requirements of the above authorities, it is good practice for an oven
to be positioned in a commercial cooking environment which includes conventional food
preparation and service standards of hygiene and surroundings, including make-up air to
ensure a comfortable and safe operating environment. Our Gas ovens (like all brands)
will always require mechanical ventilation due to the by-products of combustion.
Our electric ovens vary in size starting as low as 2 kW, and are fully gasketed and
insulated. Depending on the application of the oven, there are many situations where the
ovens are able to be installed without mechanical ventilation. Applications such as
reheating, baking, warming or other uses that do not generate grease laden vapour.
High protein applications however, such as meat and poultry roasting, finishing and
broiling will generate grease laden vapour which should be treated accordingly. Please
note we offer an approved self-contained ventless hood for such conditions.
From the manufacturer's perspective — we do not require our ovens to be positioned
under hoods — but we urge good practice in the positioning, installation and use of the
ovens and defer to the local inspectors requirements in regard to installation based on
the application and other relevant factors of the site.
Our ovens will not require more or less ventilation than those of our competition in like -
for -like power ratings and applications.
